Pumpkin spice muffin recipe
3/4 cup vanilla protein powder
3/4 cup oat flour or almond flour
1/2 cup canned pumpkin
1/4 cup maple syrup
1 chia or flax egg
1/4 cup coconut oil
1 Tbsp vanilla extract
1/4 tsp cinnamon
1/2tsp baking soda
1. Preheat oven to 350 degrees
2. In a large bowl, mix all ingredients until well combined. Pour into muffin tin sprayed with non-stick spray
3. Bake for 15 minutes or until a tootpick comes out clean
4. Allow to cool for 5 minutes & enjoy!
